Ingredients
- 240g hake fillet, steamed and flaked
- 1 tbsp breadcrumbs
- 2 tbsps fresh parsley, chopped
- 2 cups ciabatta bread, cubed
- milk – for soaking
- 1 egg, beaten
- ½ clove garlic, finely chopped
- all purpose flour
- ⅓ tsp orange zest
- ⅓ tsp grated ginger
- 1 tbsp spring onion, chopped
- 1 tbsp toasted sesame seeds
- vegetable oil, for frying
- For the sweet & sour sauce:
- 1 cup sugar
- juice of 1 orange
- 1 tsp fresh ginger, grated
- ½ cup pineapple juice
- 1 tsp garlic, finely chopped
- 2 tbsps soy sauce
- ¼ cup white vinegar
- a splash of sriracha
- ¼ cup warm water
- ¼ cup cornflour
