Ingredients
- 3 medium aubergines, thinly sliced
- Oil for brushing (preferably Olive)
- 300g Kefalos Provolone cheese
- 125 freshly grated Kefalos Kefalotiri Cheese (Parmesan)
- 3 slices of stale bread
- 6 cloves of garlic
- 1 tbsp unsalted butter
- Salt and black pepper
Sauce:
- 2 tbsp oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 tin chopped tomatoes & 1 tin water
- 1 tsp sugar
- fresh basil, torn into pieces
