- 1 1/2 pounds (about 1 large) sweet potatoes, scrubbed
- 1 1/2 pounds (about 1 large) russet potatoes, scrubbed
- 1 large egg, beaten
- 1 1/2 tsps kosher salt
- Freshly ground black pepper
- 1/2 tsp light brown sugar
- 1/8 tsp ground nutmeg
- 2 1/4 cups (11-1/4 ounces) all-purpose flour, plus more for rolling.
Brown Butter-sage Sauce:
- 4 ounces Unsalted Butter
- 3 tbsps finely chopped fresh sage leaves
- 2 tsps lemon zest
- Kosher salt and freshly ground black pepper, to taste
